Whole-wheat pizza dough

Pizza1 1/2 cups warm (115 degrees) water

2 packets actice dry yeast (1/4 ounce each)

1/4 cup olive oil, plus more for bowl

2 tablespoons sugar (have substituted 1 pkt stevia)

2 teaspoons course salt

2 cups all -purpose flour ( have substituted all whole wheat flour)

2 cups whole-wheat flour

1. Place water in a large bowl; sprinkle with yeast.  Let stand until foamy.  About 5 minutes.  Brush another large bowl with oil.

2. In bowl with yeast, whisk sugar, oil, and salt.  Stir in flours with a wooden spoon until a sticky dough forms.  Transfer to oiled bowl; brush top of dough with oil.  Cover bowl with plastic wrap; let stand in a warm spot until dough has doubled in size, about 1 hour.

3. Turn dough out onto a well-floured surface.  With floured hands, knead until smooth, about 15 seconds; divide into two balls.

Updated variations of the recipe:

**I have substituted and left out the oil and added a small individual sized apple-sauce with cinnamon with the 4 cups of whole wheat flour and stevia.

** I have reduced the olive oil to 1/8 a cup and added used all whole wheat flour and stevia or Truvia.

** I use a pizza stone and this recipe usually makes 2 thin crusts.  I cook the crust first for 8 minutes before adding the ingredients!    My favorite toppings are a spicy BBQ sauce, grilled chicken, onions, jalapenos, red, yellow, or green peppers, and other items that may be on hand in the fridge!!!!

Katie’s Salmon Recipe

1 lb Alaskan Salmon

1/2 cup Olive Oil

1 Tablespoon Dijon Mustard

Juice of 2 limes

3 Green onions finely chopped

1/4 cup Fresh dill or 1 tablespoon of dry

Salt & Pepper to Taste

Marinate 1 – 2 hours

Barbeque in tin foil or wrap in parchment paper in the oven.

Yummy, tasty recipe for anytime of the year!

Mom’s Banana Bread

1 cup sugar

1/4 cup light butter, softened

1 2/3 cups mashed ripe banana (about 3 bananas)

1/4 cup skim milk

1/4 cup low-fat sour cream

2 large egg whites

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

Cooking spray

1.  Preheat oven to 350 degrees.

2.  Combine sugar and butter in a bowl; beat a medium speed of a mixer until well blended.  Add banana, milk, sour cream, and egg whites; beat well, and set aside.

3.  Combine flour, baking soda, and salt; stir well.  Add dry ingredients to creamed mixture, beating until blended.

4.  Spoon batter into a 9 x 5 inch loaf pan coated with cooking spray.

5.  Bake at 350 degrees for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.

Yield:  1 loaf; 20 servings (serving size:  1 slice)
